Serves 4-6

2 tablespoons olive oil 1 onion thinly sliced 175g (6oz) diced smoked bacon 2 garlic cloves chopped 2 carrots sliced 1 celery stick sliced 600ml (1pt) vegetable stock (cubes OK) 1 tablespoon chopped fresh oregano (or 1 teaspoon dried) 400g (14 oz) can chopped tomatoes 400g (14 oz) can mixed beans Heat oil in large pan and fry onion, bacon and garlic for 5 mins Add carrots, celery, stock, oregano and tomatoes. Simmer 20 -25 minutes. Add beans, simmer until heated through Season to taste.
